We tried the Louisiana pecan-crusted fish and the Brennan's fish Pontchartrain with jumbo lump crab meat. Always wonderful is the rainbow trout and crab meat - pan seared trout topped with jumbo lump crab meat in vermouth cream. And don't skip the flaming cafe brulot, prepared tableside by dousing an orange peel with brandy, Triple sec, cinnamon and cloves and setting it on fire.
